I had to share this recipe. I have tried many variations of Chicken Enchiladas over the years. This is the best, most flavorful recipe I have found. It's from my friend, Lisa, who, by the way, has successfully lost a ton of weight in the last few months. Not by eating these babies, obviously!
I added some of my roasted Hatch chilies to the enchilada sauce to extend it and make it a little chunkier. My quilting friends and my hubby thought they were the bomb. Yes, I just said, "the bomb"!
